Healthy Creamy Parmesan Herb Dressing and Dip

I'm all about "toppers."  In fact I'm working on a new category called, "Gourmet Done Skinny Jazz Toppers, " and this Healthy Creamy Parmesan Herb Dressing and Dip recipe will be definitely in that category. It's so versatile! I use it on everything-as a dip with Lavash crackers (see recipe for crackers in the note section), in tortilla wraps with chicken, lettuce, and tomatoes, and as a topping for my turkey sliders and just recently I tried it as a base for a personal pan pizza.  ...

Crispy Creamy Avocado Chicken Bacon Wrap

This Crispy Creamy Avocado Chicken Bacon Wrap is a twist on Avocado Toast.  My guacamole with it's surprise ingredient is what brings it all together. And it also has bacon! Who doesn't love bacon? I'm sure there are a few people out there who don't, but please don't comment! This is a fairly quick recipe to put together if you already have cooked chicken and tortillas on hand.  It would be great for lunch or dinner with a side salad. Very filling! Even Better Than Granny’s Meatloaf (And Better For You!)

Recently I decided to rework my grandmother's meatloaf recipe into a healthier version - thus the title, "Even Better Than Granny's Meatloaf (And Better For You)." It's a bit on the spicy side but not too spicy. If you don't like spice you can leave out the Chipotle seasoning or use less if you want. My kids think it's the best meatloaf ever! Of course they are a bit prejudiced. The original recipe appeared in my cookbook, Amy's Favorites (from my non Weight Watcher days in 2010) under ...

Asian Sautéed Radish Salad with Farro

The idea for this Asian Sautéed Radish Salad with Farro really just evolved over the period of about a week. I had heard about roasted radishes on Connect (Weight Watcher's Social Group) and how they taste very different when roasted. So I decided to try them and they were delicious!I As I was eating them, I thought, "This would be good as a salad with farro." From there the salad took on a life of it's own. I tried roasting the different vegetables together in the oven.  They were pretty ...

Instant Pot Bourbon Butternut Chicken

Looking for some comfort food? This is it! Delicious Instant Pot Bourbon Butternut Chicken. Creamy, salty, slightly spicy with a little sweet - perfection in your mouth!  Interestingly enough Bourbon Chicken was created in New Orleans by a Chinese chef on Bourbon Street. There seems to be some discrepancy as to whether bourbon was an ingredient in the chicken or if it was named after Bourbon Street. When creating this dish, I decided to add butternut squash to the dish. Not ...

Cilantro Chicken Black Bean Wrap with Lime Cream

This Cilantro Chicken Black Bean Wrap with Lime Cream recipe is adapted from one of my tea room recipes, Cilantro and Black Bean Salad. This was such a popular salad at my former tea room, Afternoon to Remember in Newcastle, California. The original salad recipe you can find in my afternoon tea cookbook, Twelve Teas to Remember. Unfortunately it wasn't a very point friendly salad with the mayonnaise and oil in the dressing thus the reason I decided to update it into a healthy wrap. It can be ...

Pineapple Salsa

This salsa is great by itself but is an excellent complement to my Pineapple Skillet Fajitas.  Basically a pico de gallo with pineapple! My family likes things spicy so I add quite a bit of jalapeño. It balances nicely with the sweetness of the pineapple. Feel free to leave the jalapeños out if you're not a fan of spicy food. It tastes great without the spice as well. I also like to serve the salsa in 1/2 of a hollowed out pineapple shell for a unique presentation.

Pineapple Skillet Fajitas

Pineapple Skillet Fajitas were inspired by one of the members, (Small Girl, Strong Why) who is on the Fatdag Blog team where I post as a guest blogger. I am proud to be a member of their non-profit team-Operation Fatdag.  My friend recently visited Manola a restaurant in Mississippi, and snapped a picture of her meal-Pineapple Fajitas and sent it to me. It sounded so intriguing that I decided to try my hand at creating it. Not sure if my version measures up to theirs (since I've never tasted ...

Chicken and Roasted Beet Salad with Citrus Vinaigrette

This Chicken and Roasted Beet Salad with Citrus Vinaigrette is my re-creation of a delicious salad I had in Carmel at La Bicyclette, called Rouge Salad. It's such a wonderful combination of fresh, sweet, salt and creamy. I added chicken breasts for a complete meal! Very filling, yet light and fresh tasting!  This recipe is designed to make as a single serving so it's easier to count points. Just divide greens up into separate salad bowls or plates, then add the following ingredients to ...

Citrus Vinaigrette

This healthy and tangy Citrus Vinaigrette is a delicious fresh tasting vinaigrette which you can use over any greens. I like to make it in a cruet so it's easier to shake.  It keeps for about 2 weeks in the refrigerator.  You can make it a creamy dressing by adding  a few tablespoons of non-fat Greek Yogurt.  It goes perfectly with my Chicken and Roasted Beet Salad. Just add a few tablespoons and what a delicious meal!
