Tomatillo Green Salsa

I've been making this tomatillo salsa for years. It was in one of my previous cookbooks, Entertaining with Amy (definitely not a smart point friendly cookbook and thus the reason I ended up joining Weight Watchers).  It's great with chips, over enchiladas, and in my Chipotle Cilantro Dressing. It's mild but you can make it hotter if you use this as a base and add 1-2 finely chopped chipotle peppers (look at far salsa in background, it's a little redder in color-that's the Spicy Tomatillo ...

Chipotle Cilantro Dressing

This recipe goes along with my series recipes. Make the Tomatillo Green Salsa, use it for salsa and chips, save some for this dressing. Make the homemade Chipotle seasoning, use it to rub on chicken/steak/seafood before grilling as well as this dressing.

Crispy Air Fried/Baked Egg Rolls

I'm very excited to bring you my Crispy Air Fried Chicken Egg Rolls! In one of my previous cookbooks (non smart point friendly) Amy's Favorites, there is a recipe called Colonel Culling's Yaki Mandu (Korean Egg Rolls). My father was stationed in Korea for about 18 months when I was young and when he came back he made these wonderful egg rolls.  Later when I was writing, Amy's Favorites, I realized I'm not sure how Korean they really were as they had Monterey Jack Cheese. Needless to say, ...

Whole Wheat Pizza Dough for Individual Pizzas

Note:  I just came out with this new homemade thin crust pizza dough. While this whole wheat crust is good, the new one is fantastic, however, the new one does take a long time compared this one. The new one is more of a traditional pizza dough - chewy, yet crispy. This Whole Wheat Pizza Dough is a quick and easy pizza dough recipe which I adapted to make it more smart point friendly. The reason the recipe quantity is on the larger side is because it's nice to have these in the fridge ...

Thai Pork Pizza

My Thai Pork Pizza is a unique combination of my Homemade Hoisin Sauce, my Kalua Pork, fresh ginger, onions, garlic, cilantro and cabbage. These pizzas make up very quickly if you have the pizza dough in the freezer and the Kalua pork already made. You can also use cooked chicken in place of the pork. This recipe is for 4 but you could easily do it for more or less people. The secret ingredient in this recipe is the homemade hoisin sauce. Why do I have two pizza dough recipes listed? O...

Pork Carnitas – Instant Pot and Slow Cooker Directions

I just love Pork Carnitas! These are a more healthier version than traditional but they still taste great! They do take a bit of prep time and marinating time but they do cook fairly fast in the Instant Pot, so be sure and make a full batch (you can always freeze the leftovers). I usually buy a 15 lb pork shoulder from Costco and cut it into 3 (5 lb.) portions. I freeze two portions for later for more Instant Pot Pork Carnitas or for Kalua Pig. Also be sure and use fresh oranges and limes in ...

Scrumptious Turkey Sliders – Really!

To tell you the truth, I'm originally wasn't a big fan of ground turkey burgers.  However, when you add a bunch of spices to dress it up,  a thin slice of smoked gouda and top it off with my Jalapeño Cream, these Scrumptious Turkey Sliders are fabulous! I like them even better than traditional beef sliders. See what you think! 0 smart points per slider (3 pts if you pair it with a Slider Bun, 1/4 oz of gouda cheese and 1 t. Jalapeño cream). Serve it with a salad ...

Jalapeño Cream

This creamy delicious Jalapeño Cream is a great way to add some pizazz to any taco, sandwich or burger. Because it's made with light sour cream, it's lower in calories and points. And because it's made with jalapeños and garlic, it's full of zip. A little goes a long way.  If you use less than a tablespoon, then it doesn't even count as a smart point! Woo hoo! I use a tiny bit as a substitute for mayo on my turkey sliders. Yum! Be creative and discover your own uses for this wonder...

Healthy Black Bean and Lentil Chili

Cozy up to the fire on a cold rainy day with a cup of this delicious Instant Pot Lentil and Bean Chili! Simple, easy to make, yet filling.  I love to serve it with my homemade focaccia.  Because the chili is low in calories and points, you can serve it with a few pieces of luscious bread and a salad on the side and still stay within your point range.  1 Smart Point per 1 cup of chili. Freeze it into small portions for a quick, healthy meal later. Great for a party! ...
