Spicy Roasted Vegetables
These spicy roasted vegetables are so easy to make, take little time and keep you full all day! This is my "Go to," snack of choice. You can experiment and add your own vegetables and spices. I make up a big batch on Sundays to have them throughout the week. You can also vary up the vegetables depending on what is in season. If you don't like them spicy, leave out the chipotle seasoning and jalapeño. I eat them alone as snacks, add them to salads along with some chicken for protein, and ...
German Beef in Beer Roast
After my trip to revisit all the places I had lived in Germany last year, I came home and created this delicious and tender beef stew. It's perfect for the fall season! This tastes best in the Instant Pot but you can also do it on the stove.
Buffalo Chicken Wrap
These are the other wraps I take with me when I travel in addition to the Thai Chicken Wrap. You can make them a day or two ahead, store them in the refrigerator. They hold up nicely in a lunch cooler with an ice pack for my trip. Because they have black beans, cabbage and carrots, they also make a very nice filling lunch.
Spicy Lasagna Appetizers
These Spicy Lasagna Appetizers are so easy to make, especially if you have my Spicy Chicken Sausage in the freezer already. I like to make a double batch and freeze some for later. They make a quick appetizer if guests pop in unexpectedly as well as a nice dinner when paired with a salad. Because they are portioned out, you know exactly how many points you are eating. Only 1 smart point each! If you make them in a regular muffin size pan, they work out to be only 2 points each.
Homemade Hoisin Sauce - I could literally drink this stuff but at 2 smart points per tablespoon, maybe I shouldn't. A little goes a long way and adds a lot of pizzazz. It's very versatile, I use it in lettuce wraps, as a sauce for my Thai Pizza, and as a dressing with left over Kalua Pig. It's also great over my Spicy Roasted Vegetables. It's so yummy and this is coming from girl who hates peanut butter! Really! But I love this sauce. I make mine a bit spicy but feel free to ...
Chipotle Fish Tacos
These are super easy and quick to make. Great with rock fish, tilapia and other white fish. Serve with my Mango Salsa and Jalapeño Cream. I like to use BBQ grill mats with my little gas grill. The fish doesn't stick and it makes clean up a breeze!

This mango salsa is so fresh! Make sure you get a good ripe mango for best taste. It's great over salad, with chips and my favorite is tucked away in a fish taco. Yum! I like to spice it up with an entire jalapeno but you may want to try it with 1/2 of one first.
Trying serving this Mango Salsa with my Chipotle Fish Tacos. A delicious combination!
To Die For Guacamole
I'm so in love with this guacamole recipe. One of my coworkers gave me a version of it a long time ago and I've loved it ever since. The secret ingredient is sherry! One taste and you'll agree! If I'm just making this for me, I do this recipe, otherwise I'm tempted to eat more. If I have guests, I make a double batch. The guacamole is also great in my Chipotle Fish Tacos.
Instant Pot Kalua Pig
I've been making this Instant Pot Kalua Pig for many years but it's even better in my Instant Pot. This is my "Go To," recipe when I need a recipe that makes a lot, pleases everyone, and is easy and quick to make. It does take about 70 minutes in the Instant Pot, but the prep time is almost nothing.
What to do with leftover Kalua Pig/Kalua Pork?
This is one of the recipes in my recipe trilogy series. Whenever we have a family get together, I make this dish because you ...
Chipotle Cilantro Dressing
This recipe goes along with my series recipes. Make the Tomatillo Green Salsa, use it for salsa and chips, save some for this dressing. Make the homemade Chipotle seasoning, use it to rub on chicken/steak/seafood before grilling as well as this dressing.
