Super Easy Shoyu Poke Bowl
You won't believe how easy it is to make this ahi tuna poke bowl! Delicious fresh ahi tuna in a special marinade over rice with your favorite toppings like avocado, cucumbers, mushrooms, fried garlic, sesame seeds, and green onions. You could also just make the ahi tuna marinade and the poke and serve as an appetizer (use toothpicks for serving) and forget the rice and other vegetables.
If you're unsure about poke, give it a chance. I suspended my poke reservations when I actually had good ...

Healthy Breakfast Recipes – Sweet Potato Veggie Scramble
This Sweet Potato Veggie Scramble is the second of my Healthy Breakfast Recipes. (Crustless Chipotle Egg Cups was my first). This scramble actually happened by happy accident. I love to make healthy breakfast scrambles with everything I have in my refrigerator and pantry and often I will add a bit of potato. However, one day when I was out of regular potatoes and only had sweet potatoes, I decided to substitute those. I discovered I liked them even better than regular potatoes! Thus this ...
My Food Philosophy and Eating Redesigned
Looking back on My Food Philosophy that I posted when I started my blog years ago, most of what I wrote is still very true today. My focus was about creating great tasting healthy gourmet recipes that help people lose and maintain weight for life. I'm still about good food, good taste and making every bite count. I'm not about fat free, sugar free yuck and preservatives. I'm about real food, good nutritious food, and foods that make your heart sing.
While this is still my passion and focus, ...
Why My Weight Loss Continues to be a Journey
When I first started this food blog back in 2018, I never knew what a journey it would be. In fact I thought I was finished with my weight loss journey for the most part. I had lost over 40 pounds. Little did I realize how much work it is to stay at goal through the ups and downs of life. It's relatively easy to lose weight when you are super focused on just that. But throw in life and all of its curve balls, maintaining becomes way more difficult. Losing weight is a journey, not a ...

These broiled scallop bacon bundle appetizers are quick to put together, delicious and make a great impression on your guests. They are a simple, yet elegant appetizer. Why use prosciutto and not bacon to wrap the scallops?
Of course bacon always tastes great but using prosciutto is a bit healthier. Plus prosciutto when ...
