Delicious Spicy Jalapeño Poppers with a Healthy Twist
These delicious spicy Jalapeño poppers with a healthy twist can be made a few days ahead of time and are also great reheated as left overs. So filling and a great low point appetizer option! Only 1 Freestyle Smart Point per jalapeño! To make things super easy, I suggest purchasing a Jalapeño Grill Rack and Pepper Corer Tool.

Sea Salt Chocolate Caramel Bars
Of all the recipes I've done over the years, this Chocolate Caramel Bar dessert by far has been the most popular. I have sold a lot of afternoon tea room cookbooks, because of this basic recipe. The one posted here is a newer version than any of the versions in my afternoon tea cookbooks. First there was chocolate, next came caramel and now - Sea Salt Caramel.
How this original recipe came about:
It all started out with the name, "Choc Bars." I received the original version from a co-worker ...
Healthy Jalapeño Adobo Turkey Sliders
These Healthy Jalapeño Adobo Turkey Sliders are a variation of my Scrumptious Turkey Sliders and use my Chipotle seasoning. They are on the spicy side but not too hot. (You can always adjust the heat by using less chipotle seasoning, jalapeños and chipotle peppers). Serve with my Slider Bun, a dollop of my Jalapeño Cream and a nice salad on the side, all for 2 points! If you have the turkey sliders and buns in the freezer, you can reheat them in a jiffy for a quick lunch or dinner.
This Homemade Chipotle Seasoning is a great seasoning to have on hand. Use it as a rub for steak, chicken, seafood and roasted veggies. It's also in my Chipotle Cilantro dressing. If you don't like it spicy, use less chipotle pepper.
Recently I realized that many of my recipes use this seasoning. It's so versatile! When I make a batch, I actually make 5 times the recipe and store it in an old large Costco Spice container. I use it that much!
Garlic Scapes and Garlic Spears: Air Fried, Grilled and Roasted
It's Garlic Scape Season (also called Garlic Spears) here in the Northwest! My favorite time of year! Even my youngest son gets excited. I brought home 3 bunches today! They are available only a few weeks out of the year.
What are they?
Well for those of you who don't know about Garlic Scapes and believe me there are quite a few people who have never heard of them - they are the flower stalks that spring out of the garlic plant bulb. Farmers remove the bud in late June to encourage the ...
Easy Instant Pot Gourmet Chicken Cordon Bleu
How did this Easy Instant Pot Gourmet Chicken Cordon Bleu come about? Last week I was in the mood for Chicken Cordon Bleu. I was thinking I might try and make a comfort type dish in my Instant Pot. I had my own Chicken Cordon Bleu recipe in mind to make over but I decided to check out the internet for inspiration and found one that sounded pretty good. In fact the recipe I found was rated high and one person said her family loved it so much - she made it twice in one week! Score!
Grilled Napa Cabbage Salad with Blue Cheese, Bacon and Mushrooms
I'm so excited to share this Grilled Napa Cabbage Salad (with Chicken, Blue Cheese and Mushrooms and a hint of bacon) with you! Last week, I woke up in the middle of the night thinking about this salad. While working for Placer County Office of Education as a special education teacher, occasionally our team would go out to lunch after an important meeting and sometimes we would eat at Cafe Bernardo in Roseville, California. This was my favorite thing on the menu - "Warm Napa Cabbage Salad." ...
Healthy Creamy Parmesan Herb Dressing and Dip
I'm all about "toppers." In fact I'm working on a new category called, "Gourmet Done Skinny Jazz Toppers, " and this Healthy Creamy Parmesan Herb Dressing and Dip recipe will be definitely in that category. It's so versatile! I use it on everything-as a dip with Lavash crackers (see recipe for crackers in the note section), in tortilla wraps with chicken, lettuce, and tomatoes, and as a topping for my turkey sliders and just recently I tried it as a base for a personal pan pizza. (I'll be ...
Crispy Creamy Avocado Chicken Bacon Wrap
This Crispy Creamy Avocado Chicken Bacon Wrap is a twist on Avocado Toast. My guacamole with it's surprise ingredient is what brings it all together. And it also has bacon! Who doesn't love bacon? I'm sure there are a few people out there who don't, but please don't comment! This is a fairly quick recipe to put together if you already have cooked chicken and tortillas on hand. It would be great for lunch or dinner with a side salad. Very filling!
Even Better Than Granny’s Meatloaf (And Better For You!)
Recently I decided to rework my grandmother's meatloaf recipe into a healthier version - thus the title, "Even Better Than Granny's Meatloaf (And Better For You)." It's a bit on the spicy side but not too spicy. If you don't like spice you can leave out the Chipotle seasoning or use less if you want.
The original recipe appeared in my cookbook, Amy's Favorites (from my non Weight Watcher days in 2010) under the title, "Granny's Meatloaf." It originally had ground beef and hot pork sausage ...
