Spicy Lasagna Appetizers
These Spicy Lasagna Appetizers are so easy to make, especially if you have my Spicy Chicken Sausage in the freezer already. I like to make a double batch and freeze some for later. They make a quick appetizer if guests pop in unexpectedly as well as a nice dinner when paired with a salad. Because they are portioned out, you know exactly how many points you are eating. Only 1 smart point each! If you make them in a regular muffin size pan, they work out to be only 2 points each.

I could literally drink this stuff but at 2 smart points per tablespoon, maybe I shouldn't. A little goes a long way and adds a lot of pizazz. It's very versatile, I use it in lettuce wraps, as a sauce for my Thai Pizza, and as a dressing with left over Kalua Pig. It's also great over my Spicy Roasted Vegetables. Chipotle Fish Tacos
These are super easy and quick to make. Great with rock fish, tilapia and other white fish. Serve with my Mango Salsa and Jalapeño Cream. I like to use BBQ grill mats with my little gas grill. The fish doesn't stick and it makes clean up a breeze!

This salsa is so fresh! Make sure you get a good ripe mango for best taste. It's great over salad, with chips and my favorite is tucked away in a fish taco. Yum! I like to spice it up with an entire jalapeno but you may want to try it with 1/2 of one first.
To Die For Guacamole
I'm so in love with this guacamole recipe. One of my coworkers gave me a version of it a long time ago and I've loved it ever since. The secret ingredient is sherry! One taste and you'll agree! If I'm just making this for me, I do this recipe, otherwise I'm tempted to eat more. If I have guests, I make a double batch. The guacamole is also great in my Chipotle Fish Tacos.
