Chipotle Fish Tacos
These are super easy and quick to make. Great with rock fish, tilapia and other white fish. Serve with my Mango Salsa and Jalapeño Cream. I like to use BBQ grill mats with my little gas grill. The fish doesn't stick and it makes clean up a breeze!

This mango salsa is so fresh! Make sure you get a good ripe mango for best taste. It's great over salad, with chips and my favorite is tucked away in a fish taco. Yum! I like to spice it up with an entire jalapeno but you may want to try it with 1/2 of one first.
Trying serving this Mango Salsa with my Chipotle Fish Tacos. A delicious combination!
To Die For Guacamole
I'm so in love with this guacamole recipe. One of my coworkers gave me a version of it a long time ago and I've loved it ever since. The secret ingredient is sherry! One taste and you'll agree! If I'm just making this for me, I do this recipe, otherwise I'm tempted to eat more. If I have guests, I make a double batch. The guacamole is also great in my Chipotle Fish Tacos.
Homemade Flour Tortillas
Homemade flour tortillas are so easy to make. These homemade flour tortillas are made using your food processor. Only 5 ingredients! Make up batch and freeze some for later.
Have you ever decided to make tacos at the last minute and realized you didn't have any tortillas? Well this happened to me once and I decided to make them. Most people have all of the ingredients on hand with the exception of lard, but you can substitute butter if you need to. After I made them once, I realized how ...
Instant Pot Kalua Pig
I've been making this Instant Pot Kalua Pig for many years but it's even better in my Instant Pot. This is my "Go To," recipe when I need a recipe that makes a lot, pleases everyone, and is easy and quick to make. It does take about 70 minutes in the Instant Pot, but the prep time is almost nothing.
What to do with leftover Kalua Pig/Kalua Pork?
This is one of the recipes in my recipe trilogy series. Whenever we have a family get together, I make this dish because you ...
Tomatillo Green Salsa
I've been making this tomatillo salsa for years. It was in one of my previous cookbooks, Entertaining with Amy (definitely not a smart point friendly cookbook and thus the reason I ended up joining Weight Watchers). It's great with chips, over enchiladas, and in my Chipotle Cilantro Dressing. It's mild but you can make it hotter if you use this as a base and add 1-2 finely chopped chipotle peppers (look at far salsa in background, it's a little redder in color-that's the Spicy Tomatillo ...
Chipotle Cilantro Dressing
This recipe goes along with my series recipes. Make the Tomatillo Green Salsa, use it for salsa and chips, save some for this dressing. Make the homemade Chipotle seasoning, use it to rub on chicken/steak/seafood before grilling as well as this dressing.
Crispy Air Fried/Baked Egg Rolls
I'm very excited to bring you my Crispy Air Fried Chicken Egg Rolls! In one of my previous cookbooks (non smart point friendly) Amy's Favorites, there is a recipe called Colonel Culling's Yaki Mandu (Korean Egg Rolls). My father was stationed in Korea for about 18 months when I was young and when he came back he made these wonderful egg rolls. Later when I was writing, Amy's Favorites, I realized I'm not sure how Korean they really were as they had Monterey Jack Cheese. Needless to say, ...
Whole Wheat Pizza Dough for Individual Pizzas
Note: I just came out with this new homemade thin crust pizza dough. While this whole wheat crust is good, the new one is fantastic, however, the new one does take a long time compared this one. The new one is more of a traditional pizza dough - chewy, yet crispy.
This Whole Wheat Pizza Dough is a quick and easy pizza dough recipe which I adapted to make it more smart point friendly. The reason the recipe quantity is on the larger side is because it's nice to have these in the fridge ...
Thai Pork Pizza
My Thai Pork Pizza is a unique combination of my Homemade Hoisin Sauce, my Kalua Pork, fresh ginger, onions, garlic, cilantro and cabbage. These pizzas make up very quickly if you have the pizza dough in the freezer and the Kalua pork already made. You can also use cooked chicken in place of the pork. This recipe is for 4 but you could easily do it for more or less people. The secret ingredient in this recipe is the homemade hoisin sauce.
Why do I have two pizza dough recipes listed?
