Spicy Lasagna Appetizers

These Spicy Lasagna Appetizers are so easy to make, especially if you have my Spicy Chicken Sausage in the freezer already. I like to make a double batch and freeze some for later. They make a quick appetizer if guests pop in unexpectedly as well as a nice dinner when paired with a salad. Because they are portioned out, you know exactly how many points you are eating. Only 1 smart point each! If you make them in a regular muffin size pan, they work out to be only 2 points each. This ...

Hoisin Sauce

Homemade Hoisin Sauce - I could literally drink this stuff but at 2 smart points per tablespoon, maybe I shouldn't.  A little goes a long way and adds a lot of pizzazz. It's very versatile, I use it in lettuce wraps, as a sauce for my Thai Pizza, and as a dressing with left over Kalua Pig.  It's also great over my Spicy Roasted Vegetables. It's so yummy and this is coming from girl who hates peanut butter! Really! But I love this sauce.  I make mine a bit spicy but feel free to ...

Chipotle Fish Tacos

These are super easy and quick to make. Great with rock fish, tilapia and other white fish. Serve with my Mango Salsa and Jalapeño Cream. I like to use BBQ grill mats with my little gas grill. The fish doesn't stick and it makes clean up a breeze! Mango Salsa

This mango salsa is so fresh! Make sure you get a good ripe mango for best taste.  It's great over salad, with chips and my favorite is tucked away in a fish taco. Yum! I like to spice it up with an entire jalapeno but you may want to try it with 1/2 of one first. Trying serving this Mango Salsa with my Chipotle Fish Tacos. A delicious combination!

To Die For Guacamole

I'm so in love with this guacamole recipe. One of my coworkers gave me a version of it a long time ago and I've loved it ever since.  The secret ingredient is sherry! One taste and you'll agree! If I'm just making this for me, I do this recipe, otherwise I'm tempted to eat more. If I have guests, I make a double batch. The guacamole is also great in my Chipotle Fish Tacos. Smart Points

Homemade Flour Tortillas

Homemade flour tortillas are so easy to make. These homemade flour tortillas are made using your food processor. Only 5 ingredients! Make up batch and freeze some for later. Have you ever decided to make tacos at the last minute and realized you didn't have any tortillas? Well this happened to me once and I decided to make them. Most people have all of the ingredients on hand with the exception of lard, but you can substitute butter if you need to. After I made them once, I realized how ...

Instant Pot Kalua Pig

I've been making this Instant Pot Kalua Pig for many years but it's even better in my Instant Pot.  This is my "Go To," recipe when I need a recipe that makes a lot, pleases everyone, and is easy and quick to make. It does take about 70 minutes in the Instant Pot, but the prep time is almost nothing. What to do with leftover Kalua Pig/Kalua Pork? This is one of the recipes in my recipe trilogy series.  Whenever we have a family get together, I make this dish because you ...

Tomatillo Green Salsa

I've been making this tomatillo salsa for years. It was in one of my previous cookbooks, Entertaining with Amy (definitely not a smart point friendly cookbook and thus the reason I ended up joining Weight Watchers).  It's great with chips, over enchiladas, and in my Chipotle Cilantro Dressing. It's mild but you can make it hotter if you use this as a base and add 1-2 finely chopped chipotle peppers (look at far salsa in background, it's a little redder in color-that's the Spicy Tomatillo ...

Chipotle Cilantro Dressing

This recipe goes along with my series recipes. Make the Tomatillo Green Salsa, use it for salsa and chips, save some for this dressing. Make the homemade Chipotle seasoning, use it to rub on chicken/steak/seafood before grilling as well as this dressing.

Crispy Air Fried/Baked Egg Rolls

I'm very excited to bring you my Crispy Air Fried Chicken Egg Rolls! In one of my previous cookbooks (non smart point friendly) Amy's Favorites, there is a recipe called Colonel Culling's Yaki Mandu (Korean Egg Rolls). My father was stationed in Korea for about 18 months when I was young and when he came back he made these wonderful egg rolls.  Later when I was writing, Amy's Favorites, I realized I'm not sure how Korean they really were as they had Monterey Jack Cheese. Needless to say, ...
