Summer Chicken Salad with Tomatoes, Grilled Peaches and Cumin Lime Vinaigrette

This Summer Chicken Salad with Tomatoes, Grilled Peaches and Cumin Lime Vinaigrette came about because of my love for tomatoes. I can not even tell you how much I love fresh tomatoes. This love affair began when I moved to California until then, I don't think I really knew how good tomatoes could be. When I moved to Seattle (after living 18 years in California) I was devastated because I couldn't grow tomatoes in the first house we lived in. I even had to start buying cherry tomatoes in the ...

Gourmet Done Skinny Healthy Garlic Ranch Dressing and Dip

Creating the perfect healthy Ranch Dressing I've been working on this Garlic Ranch dressing for a while now even before I was into healthy eating but never could quite perfect it until now.  My son and I are such suckers for the Cheesecake Factory Ranch dressing. We love to dip our fries into it. (Well that was before Weight Watcher days, and you wonder why I ended up on Weight Watchers!) Over the years, I've searched high and low for a similar recipe but could never find one that ...

Healthy Creamy Parmesan Herb Dressing and Dip

I'm all about "toppers."  In fact I'm working on a new category called, "Gourmet Done Skinny Jazz Toppers, " and this Healthy Creamy Parmesan Herb Dressing and Dip recipe will be definitely in that category. It's so versatile! I use it on everything-as a dip with Lavash crackers (see recipe for crackers in the note section), in tortilla wraps with chicken, lettuce, and tomatoes, and as a topping for my turkey sliders and just recently I tried it as a base for a personal pan pizza.  (I'll be ...

Citrus Vinaigrette

This healthy and tangy Citrus Vinaigrette is a delicious fresh tasting vinaigrette which you can use over any greens. I like to make it in a cruet so it's easier to shake.  It keeps for about 2 weeks in the refrigerator.  You can make it a creamy dressing by adding  a few tablespoons of non-fat Greek Yogurt.  It goes perfectly with my Chicken and Roasted Beet Salad. Just add a few tablespoons and what a delicious meal!

Hoisin Sauce

I could literally drink this stuff but at 2 smart points per tablespoon, maybe I shouldn't.  A little goes a long way and adds a lot of pizazz. It's very versatile, I use it in lettuce wraps, as a sauce for my Thai Pizza, and as a dressing with left over Kalua Pig.  It's also great over my Spicy Roasted Vegetables. It's so yummy and this is coming from girl who hates peanut butter! Really! But I love this sauce.  I make mine a bit spicy but feel free to leave out the sriracha if you wish. ...

Mango Salsa

This salsa is so fresh! Make sure you get a good ripe mango for best taste.  It's great over salad, with chips and my favorite is tucked away in a fish taco. Yum! I like to spice it up with an entire jalapeno but you may want to try it with 1/2 of one first.

To Die For Guacamole

I'm so in love with this guacamole recipe. One of my coworkers gave me a version of it a long time ago and I've loved it ever since.  The secret ingredient is sherry! One taste and you'll agree! If I'm just making this for me, I do this recipe, otherwise I'm tempted to eat more. If I have guests, I make a double batch. The guacamole is also great in my Chipotle Fish Tacos. Smart Points

Tomatillo Green Salsa

I've been making this tomatillo salsa for years. It was in one of my previous cookbooks, Entertaining with Amy (definitely not a smart point friendly cookbook and thus the reason I ended up joining Weight Watchers).  It's great with chips, over enchiladas, and in my Chipotle Cilantro Dressing. It's mild but you can make it hotter if you use this as a base and add 1-2 finely chopped chipotle peppers (look at far salsa in background, it's a little redder in color-that's the Spicy Tomatillo ...

Chipotle Cilantro Dressing

This recipe goes along with my series recipes. Make the Tomatillo Green Salsa, use it for salsa and chips, save some for this dressing. Make the homemade Chipotle seasoning, use it to rub on chicken/steak/seafood before grilling as well as this dressing.

Skinny Delicious Blue Cheese Dressing and Dip

This is my own adapted version of Skinnytaste Creamy Low Fat Blue Cheese Dressing. I just love that dressing and over the years I have added a few things and subtracted a few things to make it my own. This is perfect for salads, wraps, dips. I like mine very thick but you could thin it with a bit of skim milk. Only 1 smart point per tablespoon and 1 tablespoon goes a long way.
