Even Better Than Granny’s Meatloaf (And Better For You!)
Recently I decided to rework my grandmother's meatloaf recipe into a healthier version - thus the title, "Even Better Than Granny's Meatloaf (And Better For You)." It's a bit on the spicy side but not too spicy. If you don't like spice you can leave out the Chipotle seasoning or use less if you want. My kids think it's the best meatloaf ever! Of course they are a bit prejudiced.
The original recipe appeared in my cookbook, Amy's Favorites (from my non Weight Watcher days in 2010) under the ...

Delicious and Moist Instant Pot Chicken for Sandwiches, Salads, Etc.
I'm really a lover of chicken thighs because they are so moist. I've been eating them for years. However, when Weight Watchers changed to the Freestyle program this past December and chicken breasts became free points, I decided I needed to figure out how to to love chicken breasts. I think I've done it with these Delicious and Moist Instant Pot Chicken.
Why brine the chicken first?
By brining the chicken breasts (or thighs) first, (preferably overnight), then cooking them in the Instant ...
Caribbean Black Bean Soup-Instant Pot
This recipe was in my cookbook Amy's Favorite Recipes published back in 2010 and I have adapted it for the Instant Pot. The original recipe came from my mother's Army wives group when they were stationed in Texas. It's perfect on a winter day and freezes very well. I often serve it with my 2 Smart Point Slider Buns.

Looking for a 2 pt slider bun? I often buy Franz Slider Buns and they are 2 points each, however sometimes I have trouble finding them. These actually taste much better! But who doesn't love fresh baked bread? If you have a bread maker, these are super easy, but even if you don't, I've included directions in the note section on how to do it by hand. For the bread machine I use the "quick dough" cycle and take the dough out when it's done mixing. This recipe makes about 54 slider buns, don't ...
Spicy Chicken Sausage
Many recipes call for chicken sausage. I had a hard time finding it until I decided to make my own and found Emeril's recipe. It's delicious and tastes so much better when you make your own. It really doesn't take that much prep time especially if you make a big batch and freeze for later. I adapted it only slightly because it's good just the way it is. If you don't like spicy sausage, feel free to cut back on the cayenne. It's more moist if you use chicken thighs but you can also use ...
Instant Pot Pork Tenderloins in Creamy Mushroom Sauce
After my last trip Germany, I came back inspired to make Jagerschnitzel in a healthy way. I didn't want to call it officially, "Jagerschnitzel," as it isn't as rich as the German version. Normally the pork is breaded with bread crumbs and egg or flour and egg, but since I'm trying to keep the points down, I decided to cut this part out. Because it's done in the Instant Pot, the pork turns out very tender and juicy. Use thin pork chops and trim the fat.
German Beef in Beer Roast
After my trip to revisit all the places I had lived in Germany last year, I came home and created this delicious and tender beef stew. It's perfect for the fall season! This tastes best in the Instant Pot but you can also do it on the stove.
Spicy Lasagna Appetizers
These Spicy Lasagna Appetizers are so easy to make, especially if you have my Spicy Chicken Sausage in the freezer already. I like to make a double batch and freeze some for later. They make a quick appetizer if guests pop in unexpectedly as well as a nice dinner when paired with a salad. Because they are portioned out, you know exactly how many points you are eating. Only 1 smart point each! If you make them in a regular muffin size pan, they work out to be only 2 points each.
