Homemade Flour Tortillas

Have you ever decided to make tacos at the last minute and realized you didn't have any tortillas? Well this happened to me once and I decided to make them. Most people have all of the ingredients on hand with the exception of lard, but you can substitute butter if you need to. After I made them once, I realized how easy and how much better they taste. I no longer buy them anymore.

Instant Pot Kalua Pig

I've been making this dish for years but it's even better in my Instant Pot.  This is one of the recipes in my recipe triology series.  The first night you make the Kalua Pig, Homemade Hoisin Sauce and serve them in lettuce wraps with rice, the second night you make Thai Pork Pizza-it's so quick especially if you have the Whole Wheat Pizza dough already in your freezer, the 3rd night (if there are any left overs, make a big lettuce salad, add a bit of pork, add some rice, cabbage and use the ...

Tomatillo Green Salsa

I've been making this tomatillo salsa for years. It was in one of my previous cookbooks, Entertaining with Amy (definitely not a smart point friendly cookbook and thus the reason I ended up joining Weight Watchers).  It's great with chips, over enchiladas, and in my Chipotle Cilantro Dressing. It's mild but you can make it hotter if you use this as a base and add 1-2 finely chopped chipotle peppers (look at far salsa in background, it's a little redder in color-that's the Spicy Tomatillo ...

Whole Wheat Pizza Dough for Individual Pizzas

This is a quick and easy pizza dough recipe which I adapted to make it more smart point friendly. The reason the recipe quantity is on the larger side is because it's nice to have these in the fridge or freezer. When you want to make a quick pizza, they are ready to go.  Divide the dough into 16 balls.  Use what you need and save or freeze the rest for later.  Individual pizzas also work well in my house because everyone likes something different. I like mushrooms and peppers on mine (hubby ...

Pork Carnitas – Instant Pot and Slow Cooker Directions

I just love Pork Carnitas! These are a more healthier version than traditional but they still taste great! They do take a bit of prep time and marinating time but they do cook fairly fast in the Instant Pot, so be sure and make a full batch (you can always freeze the leftovers). I usually buy a 15 lb pork shoulder from Costco and cut it into 3 (5 lb.) portions. I freeze two portions for later for more Instant Pot Pork Carnitas or for Kalua Pig. Also be sure and use fresh oranges and limes in ...

Scrumptious Turkey Sliders – Really!

To tell you the truth, I'm originally wasn't a big fan of ground turkey burgers.  However, when you add a bunch of spices to dress it up,  a thin slice of smoked gouda and top it off with my Jalapeño Cream, these Scrumptious Turkey Sliders are fabulous! I like them even better than traditional beef sliders. See what you think! 0 smart points per slider (3 pts if you pair it with a Slider Bun, 1/4 oz of gouda cheese and 1 t. Jalapeño cream). Serve it with a salad and you have a low point ...

Lentil and Bean Chili-Instant Pot

Cozy up to the fire on a cold rainy day with a cup of this delicious Instant Pot Lentil and Bean Chili! Simple, yet filling. This is a perfect soup to serve for company. I let them add their own toppings. It appeals to everyone, including meat lovers,  vegans and vegetarians.  I love to serve it with my homemade focaccia.  Because the chili is low in calories and points, you can serve it with a few pieces of luscious bread and a salad on the side and still stay within your point range.  1 ...
