Here's a quick and easy recipe for Italian Pork and takes less than 30 minutes in the Instant Pot.

  After my last trip Germany, I came back inspired to make Jagerschnitzel in a healthy way.  I didn't want to call it officially, "Jagerschnitzel," as it isn't as rich as the German version.  Normally the pork is breaded with bread crumbs and egg or flour and egg, but since I'm trying to keep the points down, I decided to cut this part out.  Because it's done in the Instant Pot, the pork turns out very tender and juicy.  Use thin pork chops and trim the fat.

These Thai Wraps are great and hold up well for traveling if you put them in a cold lunch pack. I often take them on the airplane with me. As long as your ice packs are totally solid when you go through security, bringing perishable food is no problem. It's best to make your own tortillas (see my recipe) instead of the store bought ones if you are making them a day or two ahead.  Otherwise the tortillas break down and become soggy.

These pizzas make up very quickly if you have the pizza dough in the freezer and the Kalua pork already made. You can also use cooked chicken in place of the pork. This recipe is for 4 but you could easily do it for more or less people.

Pork Carnitas – Instant Pot and Slow Cooker Directions

I just love Pork Carnitas! These are a more healthier version than traditional but they still taste great! They do take a bit of prep time and marinating time but they do cook fairly fast in the Instant Pot, so be sure and make a full batch (you can always freeze the leftovers).
