These are recipes where you make the main dish once and use the left overs for other dishes.

Pineapple Salsa

This salsa is great by itself but is an excellent complement to my Pineapple Skillet Fajitas.  Basically a pico de gallo with pineapple! My family likes things spicy so I add quite a bit of jalapeño. It balances nicely with the sweetness of the pineapple. Feel free to leave the jalapeños out if you're not a fan of spicy food. It tastes great without the spice as well. I also like to serve the salsa in 1/2 of a hollowed out pineapple shell for a unique presentation.

Hoisin Sauce

I could literally drink this stuff but at 2 smart points per tablespoon, maybe I shouldn't.  A little goes a long way and adds a lot of pizazz. It's very versatile, I use it in lettuce wraps, as a sauce for my Thai Pizza, and as a dressing with left over Kalua Pig.  It's also great over my Spicy Roasted Vegetables. These are super easy and quick to make. Great with rock fish, tilapia and other white fish. Serve with my Mango Salsa and Jalapeño Cream. I like to use BBQ grill mats with my little gas grill. Mango Salsa

This salsa is so fresh! Make sure you get a good ripe mango for best taste.  It's great over salad, with chips and my favorite is tucked away in a fish taco. Yum! I like to spice it up with an entire jalapeno but you may want to try it with 1/2 of one first.

Instant Pot Kalua Pig

Tomatillo Green Salsa

I've been making this salsa for years. It was in one of my previous cookbooks, Entertaining with Amy (definitely not a smart point friendly cookbook and thus the reason I ended up joining Weight Watchers).  It's great with chips, over enchiladas, and in my Chipotle Cilantro Dressing. Thai Pork Pizza

These pizzas make up very quickly if you have the pizza dough in the freezer and the Kalua pork already made. You can also use cooked chicken in place of the pork. This recipe is for 4 but you could easily do it for more or less people.
