This salsa is great by itself but is an excellent complement to my Pineapple Skillet Fajitas. Basically a pico de gallo with pineapple! My family likes things spicy so I add quite a bit of jalapeño. It balances nicely with the sweetness of the pineapple. Feel free to leave the jalapeños out if you're not a fan of spicy food. It tastes great without the spice as well. I also like to serve the salsa in 1/2 of a hollowed out pineapple shell for a unique presentation.
Pineapple Skillet Fajitas
Pineapple Skillet Fajitas were inspired by one of the members, (Small Girl, Strong Why) who is on the Fatdag Blog team where I post as a guest blogger. I am proud to be a member of their non-profit team-Operation Fatdag. My friend recently visited Manola a restaurant in Mississippi, and snapped a picture of her meal-Pineapple Fajitas and sent it to me. It sounded so intriguing that I decided to try my hand at creating it. Not sure if my version measures up to theirs (since I've never tasted ...
I could literally drink this stuff but at 2 smart points per tablespoon, maybe I shouldn't. A little goes a long way and adds a lot of pizazz. It's very versatile, I use it in lettuce wraps, as a sauce for my Thai Pizza, and as a dressing with left over Kalua Pig. It's also great over my Spicy Roasted Vegetables. It's so yummy and this is coming from girl who hates peanut butter! Really! But I love this sauce. I make mine a bit spicy but feel free to leave out the sriracha if you wish. ...
Chipotle Fish Tacos
These are super easy and quick to make. Great with rock fish, tilapia and other white fish. Serve with my Mango Salsa and Jalapeño Cream. I like to use BBQ grill mats with my little gas grill. The fish doesn't stick and it makes clean up a breeze!

This salsa is so fresh! Make sure you get a good ripe mango for best taste. It's great over salad, with chips and my favorite is tucked away in a fish taco. Yum! I like to spice it up with an entire jalapeno but you may want to try it with 1/2 of one first.
Instant Pot Kalua Pig
I've been making this dish for years but it's even better in my Instant Pot. This is one of the recipes in my recipe triology series. The first night you make the Kalua Pig, Homemade Hoisin Sauce and serve them in lettuce wraps with rice, the second night you make Thai Pork Pizza-it's so quick especially if you have the Whole Wheat Pizza dough already in your freezer, the 3rd night (if there are any left overs, make a big lettuce salad, add a bit of pork, add some rice, cabbage and use the ...
Tomatillo Green Salsa
I've been making this salsa for years. It was in one of my previous cookbooks, Entertaining with Amy (definitely not a smart point friendly cookbook and thus the reason I ended up joining Weight Watchers). It's great with chips, over enchiladas, and in my Chipotle Cilantro Dressing. It's mild but you can make it hotter if you use this as a base and add 1-2 finely chopped chipotle peppers (look at far salsa in background, it's a little redder in color-that's the Spicy Tomatillo Salsa). I ...
Thai Pork Pizza
These pizzas make up very quickly if you have the pizza dough in the freezer and the Kalua pork already made. You can also use cooked chicken in place of the pork. This recipe is for 4 but you could easily do it for more or less people.
