When you eat this healthy spa chicken salad with honey mustard dressing, you can taste all of the goodness and feel all of the great benefits filling up your body. Tender pieces of chicken surrounded by healthy flavorful vegetables like cucumber, avocado, red bell pepper topped with feta and a light sweet and tangy honey mustard dressing.

Inspiration for this healthy salad

The inspiration for this chicken salad came when I visit my parents in Venice, Florida. We like to dine at T.J. Carney’s . One of my favorite menu items is their “Spa Wrap.” I love it so much that I decided to turn it into a healthy salad.

How should I cook the chicken?

My favorite way to cook the chicken for this recipe is to grill the chicken. I grill chicken breasts/thighs ahead of time, chop them up and put them into vacuum sealed bags (paid link) and freeze them into 1-2 c. portions. Whenever I need cooked chicken, I just go to my freezer. You can also cook the chicken in the Instant Pot. For delicious moist chicken, try this recipe.

Try it as a wrap!

It’s delicious in a tortilla. Feel free to make it into a wrap, just be sure and add the points/calories if you’re counting. Serve the honey mustard dressing as a sauce in a small condiment cup on the side for dipping!

How to make it ahead of time

To make this salad ahead of time, have everything ready to go. Just be sure and add the dressing right before you serve it. If you want to make it a day ahead, just cut everything all up, keep it separate until the day of and put it together at the last minute.

How to easily make it for a larger crowd

You can easily adapt this salad to accomodate more people. For each person, use 1 oz cooked chicken, 1 c. spring mix, 1 c. spinach, 1/4 c. arugula and 1/4 c. vegetables, 2 T. avocado, 1 T. feta and 1 T. dressing.

Arrange the greens in a large bowl or individual bowl. Feel free to use more or less depending on your tastes.

Layer the chicken, cucumbers, carrots, red pepper, onions and avocado. Sprinkle the feta and drizzle the honey mustard dressing over the top. Enjoy!

Ingredients
  

  • 2 oz. cooked chicken breasts (grilled is my favorite but this one is great too
  • 2 c. spring mix
  • 2 c. fresh spinach torn into bite size pieces
  • 1/2 c. arugula leave it out if you're not a fan
  • 1/2 c. cucumber chopped
  • 1/2 c. carrots shredded
  • 1/2 c. red bell pepper chopped
  • 1/4 c. red onions chopped
  • 4 T. avocado chopped (optional-subtract 1 point if you leave it out)
  • 2 T. feta crumbled
  • 2 T. honey mustard dressing you can use more, just add 2 points per tablespoon

Instructions
 

  • In individual bowls, or a large salad bowl, arrange greens.
  • Layer cucumber, carrots, red bell pepper, onions, and avocado.
  • Sprinkle feta and drizzle honey mustard dressing over the top. Enjoy!

Notes

You can use more honey mustard dressing just be sure and add in the points.
Try adding crumbled bacon for a delicious twist!
