Crispy Sesame Air Fried Brussels Sprouts

You're going to love these healthy, crispy, salty, sesame air fried brussels sprouts even if you think you won't! Let me explain! I hate Brussels sprouts, or at least I thought I did until recently. I first had some that I liked a few years ago at a restaurant in Seattle called El Gaucho. My friend said, "We have to get these as an appetizer! They are delicious!" I thought and said to myself, "Yeah, right." But she's a foodie like me so I trusted her opinion. They were crispy and ...

Roasted Indian Cauliflower Vegetable Medley

Who said vegetables have to be bland and boring? This Roasted Indian Cauliflower Vegetable Medley has a kick and makes a unique side dish or snack. Add some chicken and it becomes a main meal.  I make and prep a variation of roasted vegetables every Sunday (See my post on Roasted Vegetables  - My Secret Way to Stay Trim). Mandarin Wild Rice Salad with Cranberries, Mint and Pecans

The Perfect Thanksgiving Side Dish! This Mandarin Wild Rice Salad recipe has been in our family for years. It's a hearty autumn salad with cranberries, pecans, green onions, and mandarins with a delightful orange vinaigrette.  It makes a perfect side for Thanksgiving or anytime as it goes great with many fall and winter dishes. I love it with roasted turkey, chicken or pork. When I had my tea room in California, I often served this in the fall in cute glass tea cups lined with spinach. Over ...

Summer Chicken Salad with Tomatoes, Grilled Peaches and Cumin Lime Vinaigrette

This Summer Chicken Salad with Tomatoes, Grilled Peaches and Cumin Lime Vinaigrette came about because of my love for tomatoes. I can not even tell you how much I love fresh tomatoes. This love affair began when I moved to California until then, I don't think I really knew how good tomatoes could be. When I moved to Seattle (after living 18 years in California) I was devastated because I couldn't grow tomatoes in the first house we lived in. I even had to start buying cherry tomatoes in the ...

Indian Chicken Cauliflower Wrap with Cilantro Lime Cream

This Indian Chicken Cauliflower Wrap was inspired by my good friend Cheryl. She invited me over to her house this spring and served a fantastic lunch.  Everything was amazing from her house, to the table setting to the delicious food! It was a fun afternoon! She told me later she wanted me to experiment with the wrap and create a recipe for the website, so I did! She knows how much I love to play around with food. Serve this in a wrap or eat it as a side dish or snack You can serve this as a ...

Pineapple Salsa

This salsa is great by itself but is an excellent complement to my Pineapple Skillet Fajitas.  Basically a pico de gallo with pineapple! My family likes things spicy so I add quite a bit of jalapeño. It balances nicely with the sweetness of the pineapple. Feel free to leave the jalapeños out if you're not a fan of spicy food. It tastes great without the spice as well. I also like to serve the salsa in 1/2 of a hollowed out pineapple shell for a unique presentation.
