Pineapple Salsa

This salsa is great by itself but is an excellent complement to my Pineapple Skillet Fajitas.  Basically a pico de gallo with pineapple! My family likes things spicy so I add quite a bit of jalapeño. It balances nicely with the sweetness of the pineapple. Feel free to leave the jalapeños out if you're not a fan of spicy food. It tastes great without the spice as well. I also like to serve the salsa in 1/2 of a hollowed out pineapple shell for a unique presentation.

Looking for a 2 pt slider bun? I often buy Franz Slider Buns and they are 2 points each, however sometimes I have trouble finding them. These actually taste much better! But who doesn't love fresh baked bread? These spicy roasted vegetables are so easy to make, take little time and keep you full all day! This is my "Go to," snack of choice.  You can experiment and add your own vegetables and spices. This salsa is so fresh! Make sure you get a good ripe mango for best taste.  It's great over salad, with chips and my favorite is tucked away in a fish taco. Yum! I like to spice it up with an entire jalapeno but you may want to try it with 1/2 of one first.

To Die For Guacamole

I'm so in love with this guacamole recipe. One of my coworkers gave me a version of it a long time ago and I've loved it ever since.  The secret ingredient is sherry! One taste and you'll agree! If I'm just making this for me, I do this recipe, otherwise I'm tempted to eat more. If I have guests, I make a double batch. The guacamole is also great in my Chipotle Fish Tacos. Smart Points

Have you ever decided to make tacos at the last minute and realized you didn't have any tortillas? Well this happened to me once and I decided to make them. Most people have all of the ingredients on hand with the exception of lard, but you can substitute butter if you need to. After I made them once, I realized how easy and how much better they taste. I no longer buy them anymore.
