Make this quick and easy beef fajita marinade with fresh lime juice, olive oil and my homemade chipotle seasoning. This is a great marinade for making steak fajitas and Mexican chicken fajitas. The chipotle beef fajita marinade tastes best when you marinate the meat overnight, but a few hours will do!

This Chipotle Beef Fajita Marinade uses my Homemade Chipotle Seasoning. You can use it for flank steak, skirt steak, chicken, seafood and vegetables. I always make a huge batch when I make it. It’s great to have it on hand for times like these when I want to make this quick marinade or add some spice to my favorite dishes.

Is this fajita marinade healthy?

This fajita marinade is a bit healthier than other marinades as it uses fresh ingredients and less oil than most. For true WW Smart Points, calculate how much marinade you actually use after you drain it off – the calories and points provided at the end of the recipe are a rough estimate. Obviously not all of the marinade stays on the meat or veggies.

Can you use the leftover marinade as a sauce?

Yes, but be sure to cook the marinade thoroughly before you use it. Remember raw meat has been sitting in it for hours, so be sure to bring the marinade to boil for a few minutes before you serve it.

How to make Chipotle Fajita Marinade in pictures:

Gather your ingredients. That’s the hardest part! Really!

Mix ingredients together. Use freshly squeezed limes if possible.

Place meat in a glass dish or in a plastic bag (don’t use metal). Pour Chipotle Fajita Marinade over the meat or vegetables. Marinate at least 5 hours or overnight is best.

Description

This quick and easy beef fajita marinade is made with fresh lime juice, olive oil and my easy homemade chipotle seasoning.  The marinade is great for making steak fajitas, chicken fajitas, seafood and vegetables. I do find the chipotle beef fajita marinade tastes best when you marinate the meat/vegetables overnight, but a few hours will do!

Ingredients

  • 1/3 c. olive oil
  • 1/3 c. fresh lime juice (about 2 limes)
  • 1/3 c. water
  • 12 T. homemade chipotle seasoning
  • 1 t. cumin
  • 2 T. worcestershire sauce
  • 4 cloves garlic, minced
  • 1 T. brown sugar
  • 1 t. liquid smoke
  • 2 lbs flank steak, chicken thighs, or vegetables

 


Instructions

  1. Place all ingredients except for meat or vegetables in a small bowl or large measuring cup. Stir well.
  2. Place steak, chicken, seafood or vegetables in a 9×13 glass pan (not metal) or in a sealable bag.
  3. Pour marinade over meat/vegetables and marinate at least 5 hours up to overnight.
  4. Grill as desired.

Notes

For vegetables use only 1 T. homemade Chipotle Seasoning. I find they are a bit too spicy with 2 T.
