Roasted Vegetables are my secret way to stay trim. They are full of vitamins (not empty calories) and they keep you full throughout the day. Throw whatever vegetables you have on hand in a large roasting pan. Add a few tablespoons of oil, some balsamic or spice and roast in the oven. This healthy and tangy Citrus Vinaigrette is a delicious fresh tasting vinaigrette which you can use over any greens. I like to make it in a cruet so it's easier to shake. It keeps for about 2 weeks in the refrigerator. You can make it a creamy dressing by adding a few tablespoons of non-fat Greek Yogurt. It goes perfectly with my Chicken and Roasted Beet Salad. These spicy roasted vegetables are so easy to make, take little time and keep you full all day! This is my "Go to," snack of choice. You can experiment and add your own vegetables and spices. I make up a big batch on Sundays to have them throughout the week. You can also vary up the vegetables depending on what is in season. This salsa is so fresh! Make sure you get a good ripe mango for best taste. It's great over salad, with chips and my favorite is tucked away in a fish taco. Yum! I like to spice it up with an entire jalapeno but you may want to try it with 1/2 of one first.
