Tomatillo Green Salsa

I've been making this tomatillo salsa for years. It was in one of my previous cookbooks, Entertaining with Amy (definitely not a smart point friendly cookbook and thus the reason I ended up joining Weight Watchers).  It's great with chips, over enchiladas, and in my Chipotle Cilantro Dressing. Creamy Blue Cheese Mushroom Skinny Pasta

Three of my favorite foods -blue cheese, mushrooms, and bacon blended together in a creamy "pasta" dish. By using zoodles (zucchini noodles), you eliminate the calories of traditional pasta. Makes an excellent main dish or serve it alongside your favorite meat as a side dish. Enjoy! 2 Smart Points for 2 cup serving.

I let them add their own toppings. It appeals to everyone, including meat lovers,  vegans and vegetarians.  I love to serve it with my homemade focaccia.  Because the chili is low in calories and points, you can serve it with a few pieces of luscious bread and a salad on the side and still stay within your point range.  1 ...
