Oven Roasted Cedar Plank Vegetables

These Oven Roasted Cedar Plank Vegetables are super easy to make, healthy, taste delicious and will impress your guests. All you do is soak the planks at least 15 minutes, arrange vegetables, season and bake. That's it! Gorgeous fresh tasting vegetables without the fuss!

Ingredients
  

  • Cedar planks -1-2 depending on how many vegetables you are making
  • asparagus
  • brussels sprouts cut in half
  • mushrooms
  • green beans
  • zucchini
  • olive oil spray
  • kosher salt
  • freshly ground pepper

Instructions
 

  • Preheat oven to 375°.
  • Soak Cedar planks in hot water for at least 15 minutes.
  • Wash and trim vegetables.
  • Arrange on Cedar planks. Try not to pile up vegetables too much but spread out as much as possible.
  • Spray with olive oil spray. Sprinkle with kosher salt and freshly ground pepper.
  • Bake for about 20-25 minutes until done.

Notes

You want to choose vegetables (such as asparagus, mushrooms, zucchini, green beans, broccoli and carrots cut in small pieces) that will cook about the same time. Potatoes don't work as well unless you partially cook them before hand in the microwave.
