Healthy Breakfast Recipes: Sweet Potato Veggie Scramble
Cook the sweet potatoes
Chop the sweet potatoes into small pieces. Place in a bowl. Cover with a damp paper towel. Microwave for 2 minutes.
Sauté the veggies
Sauté the onions, mushrooms, red bell pepper, and asparagus. Add in cooked sweet potato.
Add in garlic, bacon and egg
Add in the garlic, bacon crumbles, kale and egg (optional). Cook until heated.
Add in cheese and serve!
Add in cheese and serve with a small piece of whole grain bread. (Recipe for bread coming soon!)
